Healthy “cookie dough” made with our Superfood Cashew Butter is a tasty treat you can enjoy as a snack, breakfast or dessert. Flavors of maple syrup and chocolate chips combined with blended chia seeds, hemp seeds & goji from the Cashew Butter create an irresistible combination. Here’s how we made it:
Chickpea Cashew Butter Cookie Dough Ingredients
1 15.5 oz. can chickpeas
1/3 cup Yumbutter Superfood Cashew Butter
1/4 cup maple syrup
1 tablespoon melted coconut oil
1 teaspoon vanilla
1 teaspoon salt
1/2 cup chocolate chips
Directions
Drain and rinse chickpeas. Remove the outer skin as much as possible. Tip: use a towel to rub the chickpeas dry, it helps to remove the skin quickly.
Add all ingredients to a food processor or blender and blend until smooth. Fold in the chocolate chips.
Optional: place in the fridge for at least 30 minutes to chill and harden the dough slightly.
Pair with fruit like apple slices or strawberries, or crackers like graham crackers. Serve and enjoy!
