Pumpkin Protein Peanut Butter Drops

Pumpkin shaped peanut butter cups are one of the best treats on Halloween -- but what if they could have actual pumpkin AND protein? These Pumpkin Protein Peanut Butter Drops are a healthier twist on a spooky season classic.

Ingredients

½ cup of plain unsweetened yogurt
½ cup of canned pumpkin
¼ cup of Yumbutter Peanut Butter
¼ cup of vanilla protein powder
½ cup of semisweet chocolate chips
1 tbsp of coconut oil

Directions

In a bowl add yogurt, pumpkin, peanut butter and protein powder. Stir until ingredients are well combined.

Using a spoon, scoop up golf ball sized balls and drop onto a parchment lined baking sheet.

Let the balls chill in the freezer for an hour.

Combine the chocolate chips and coconut oil in a bowl and microwave for 1-3 minutes at 30 second intervals, stirring between each interval until smooth.

Remove the balls from the freezer and dip the balls into melted chocolate, placing back on the parchment lined baking sheet. Freeze again for an hour.

Remove from the freezer and enjoy.
