Flourless Cashew Butter Stuffed Black Bean Cookies

Who knew black beans could be included in yummy desserts like this one?!⁠ Literally filled with flavor and natural protein, this flourless black bean cookie is a true game-changer. ⁠

Ingredients

15 oz can black beans, rinsed and drained

1 1/2 tsp baking powder

4 tbsp coconut oil

1/2 cup coconut sugar

1 egg

1/4 cup cocoa powder

1/2 tsp baking soda

2 tbsp maple syrup

1 pouch of Yumbutter Cashew Butter

Directions

Preheat oven to 350 degrees F and prepare cookie sheet. Add black beans, egg, coconut oil, and maple syrup to food processor and blend until smooth.

Transfer mixture to a large bowl and mix in dry ingredients until combined

Scoop out 1 tbsp of dough and flatten onto baking sheet. Kned your Yumbutter pouch and squeeze a nickel-sized dollop of cashew butter onto the dough. Top with another tbsp of dough and flatten again.

Repeat until all batter is used.

Bake for 10-15 minutes, let cool completely, and enjoy!
