Sweet Potato Pancakes

Fall mornings call for the kind of breakfasts that make you want to gaze out on some fall foliage while you sip on coffee from under a chunky knitted blanket (just us? Oh, okay.). We can't give you all that, but we can give you this subtly autumnal Sweet Potato Pancake recipe that is guaranteed to give you cozy vibes any time of year.  

Ingredients

2 large eggs
1½ cups non-dairy milk
1½ cups mashed sweet potato
1¾ quick pancake mix
1 teaspoon cinnamon
1 tablespoon baking powder
½ teaspoon ground cinnamon
½ teaspoon pink Himalayan salt

Toppings:

Banana slices
Coconut Yogurt
Yumbutter Cashew Butter syrup drizzle (1 tbsp melted cashew butter + 1/4 cup maple syrup)
Crushed pecans

 

Directions

Mix eggs, non-dairy milk, and sweet potato in a bowl until thoroughly combined. Fold in dry ingredients. Pour by the half-cup onto a hot greased skillet and flip when edges are set and bubbles start to rise. Top as desired and enjoy!
